Somerset Mutton Stew

A traditional Somerset recipe using apples and/or cider as an ingredient. Back to main recipe index page.



Somerset Mutton Casserole

1 lb. mutton

1 heaped tablespoon butter

2 teaspoons Worcester sauce

1/2 clove of garlic, chopped

1/4 breakfast cup of stock

Flour for dredging

1 small onion, chopped

1/4 breakfast cup of cider

1 table spoon chopped parsley

Salt and pepper to taste

Flour the mutton which has been cut into slices and brown it in the butter on each side. Remove from butter and place in a casserole with the chopped onion, garlic and parsley. Add the stock and cider and Worcester sauce to the butter and simmer for five minutes. Put this into a casserole with the slices of mutton add salt and pepper and cook in a medium oven for one hour.
